I just wanted a simple vanilla cake with a simple vanilla frosting, but it did not turn out that way. This is for all the vegans out there that love their sweets, it’s great because most vegan goodies are healthy to eat. I got carried away with the rich soy milk and made a whipped cherry frosting instead. Many vegan recipes are sweetened with agave or dates, and are free of processed sugar. Sitting in their paisley little cups no one takes cupcakes more seriously than I do and even more about the fresh delicious taste.
